1998 Grand Estates Cabernet Sauvignon


A warm growing season created Cabernet Sauvignon brimming with ideal varietal expression. Individual lots were crushed and fermented on the skins for five to eight days, depending on the flavor extraction desired by the winemaker. Select lots then underwent extended skin contact for up to 30 days to derive pronounced varietal expression. All lots underwent malolactic fermentation in predominantly new and one-year-old American oak barrels. The wine aged in the barrel for 17 months during which time it was racked by gravity flow every three months. The master blend features 65% of the Cabernet Sauvignon lots harvested for the Grand Estates program plus 10% Merlot which further defines the flavor and mouthfeel. The wine is balanced and mouth filling with black cherry, blueberry and toast.
